How Charlie fought his way through the BBQ trenches 12oz at a time!

Long long ago in a beer and BBQ fueled way of life, someone mentioned we needed to smoke something, NOT the same something that you may be thinking in todays time, but I volunteered to smoke a brisket.

14lb of brisket which in that day cost us poor kids around $30 I know, it was a LOT of money back then. HAHA
But, little did I know that was going to be the most amazing melt in your mouth slices of meat any of us could have imagined and that ignited the fire that is still drives me to BBQ today!

After that first BBQ and a few discussions with my dad on the phone, I went an bought my first real smoker. I had that thing home together and seasoned in what felt like record time. Little did I know that this also peaked the old mans interest at the same time. Dad and I both purchased similar offset smokers from the big box store and the weekend que'ing had begun. 

 

Before I ever had any idea we would ever own a BBQ Grilling store Skyler and I would also get together on Saturdays to grill up some breakfast before going to car show's or finding other kinds of trouble to get ourselves into.

 

Being a creature of habit I was always afraid to try and start a business but knew that I had always dreamt of being self-employed, but how? Friends and family had always said I needed to start up a restaurant after eating my BBQ . Unfortunately back in High School I did my time in the restaurant life and it wasn't for me, if my time as a dish boy at Country Kitchen showed me anything it would be that the vile games played in kitchen as seen in the movie Waiting starring Ryan Reynolds were true! That stuff really happens and are exactly why shows like Hells Kitchen & Kitchen Nightmares exist and thrive, Gordon Ramsay really did have his hands full with idiots just like the ones in the movie Waiting. The various jobs and opportunities in construction and telecommunications and even my 13 years in the water well industry has all taught me many wonderful lessons and had given me the strength and knowledge needed to feel comfortable quitting my career to jump head first into what is now The Grill Guys! When I got the call one afternoon from Skyler saying that it just felt like now was time for a change, time for something new and liberating, I had to think on it for a little while but when we decided that a BBQ shop was the idea to run with, it just felt right and we haven't stopped running yet! 

 

Never in a million years did I think a drunken 14lb brisket in an old Brinkmann Smoke N Grill would ever turn into the job that doesn't feel like a job but here we are!
