At the heart of all great BBQ and culinary creations are tried-and-true techniques. Our instructor will guide you through foundational knife skills in a fun, hands-on environment.

You will be standing and working with a knife for most of the class.
Please wear comfortable, closed-toe shoes and have long hair tied back.
Students will work with a number of different knives, and will also receive a voucher they can use towards a knife purchase of their own after class is done as well.

Knife Skills are the first thing you are taught in culinary school. This will give you the basis of how to use kitchen knives and be efficient and safe in the kitchen. Knowing what knife to use for certain tasks will increase your enjoyment of being in the kitchen while preparing food with friends and family.

 

In this class, we'll go over:

  • Knife Design and Steel qualities.
  • How people purchase knives (design, price, size, food preparation, performance, etc.)
  • Blade types – single blade, HE, and serrated – The right knife for the right job
  • Eastern vs Western styles
  • Storage and cutting boards – protecting the blades.
  • Sharpening vs Honing
  • Pinch Grip/Claw and Rock Chop method – (celery, carrots, onions, garlic)
  • Using/uses of serrated blades – (bread, hard skin products)
  • Tips and techniques – (julienne, roll cut, pre-cutting, chiffonade, tomato rose)
